As SS said, I don't think anyone really knows but at a guess its going to be a combination of a lot of factors, from the ball itself to atmospheric conditions and even the location.
We can make guesses but there a lot of parameters to be considered.
I believe this is called by an aerodynamic phenomenon called the Magnus Effect (http://en.wikipedia.org/wiki/Magnus_effect) where the rotation of an object alters the pressure of the air around it which can 'pull' the ball in the air. I believe the direction is dependent on which way it spins - leg spinners drift it into the right hander, off spinners away.
