There are only a few animals, most of which are fish or amphibian that are toxic to humans. Whether you consider that the definition of edible or something like 'tolerable to the human palate' the definition makes things much murkier.

Alot of it is social construct. Dog is the classic example. Taboo in some cultures, accepted as a delicacy in others.

As a general rule meat from herbivores is tastier than carnivores. I believe squirrel is actually quite nice if prepared properly...
