Some players online bowl with fast bowler with a max speed of 158kmph and min speed of 109kmph.. With fast medium pacers it's max of in 140s and min of 101 and with medium pacers 120s and 91 ...how can one attain such variations?

Use the LB/L1 and RB/R1 buttons to bowl slower or faster

It is not only L1 or R1. It is also jump and release timing. If u get out in a slower ball, see the replay carefully. The bowler would have released the delivery without attending the bowling crease.
This is one of the secret. There are other two factors that are affecting the speed variation.
